Throughout my years of cooking and experimenting with various dishes, I've come to understand two key principles. Firstly, I've discovered that the most delicious recipes are often the simplest ones. Secondly, I've learned that using fresh ingredients can truly enhance how the dish tastes. This summer spaghetti dish is perfect to make right now. As it's tomato season, I wanted to create a light pasta dish for my guests. The abundance of fresh tomatoes available at local farmer's markets allows for pasta dishes like this one to really showcase the local tomato harvest, plus the use of some rapidly growing basil from my outdoor potted plants.
Tomatoes are commonly referred to as the "fruit of the gods," and it's clear why. These colorful, succulent spheres enhance the taste, appearance, and nutritional value of recipes that call for them, and truly shine in this Tuscan-inspired spaghetti dish. The must have's for this dish include ripe cherry or grape tomatoes (either variety works well), basil, and burrata cheese. For an even more exceptional pasta dish experience, consider preparing your own fresh spaghetti.
For the sauce to be ideal, it is important to cook the tomatoes until they release their juices while still maintaining their shape. To adhere to an Italian custom, don't be shy with adding another clove garlic and one more dash of olive oil. If you and your guest are all having the same meal, I say add in a teensy bit more of garlic. Why not!
After tossing the cooked spaghetti into the pan with cooked tomatoes, transfer the mixture to a large serving bowl, and add in the basil and burrata. Toss again to incorporate. Drizzle olive oil, and top with fresh parmesan cheese (always a generous amount for our plates).
When it comes to serving our pasta meals, I opt for a traditional Italian method by placing a large family-style bowl in the middle of the table. I make sure to have my trusty vintage wooden serving spoons handy for serving, and I always ensure there is an abundance of parmesan cheese within reach, along with rustic linen napkins and one or two bottles of red wine (naturally).
