This Big Crunch - Healthy Granola Is Your Morning Yogurt Or Mid-Day Snack Hero.

Typically, I start my day with a protein smoothie, but recently I've found myself feeling hungry just a few hours later. I enjoy a tasty granola snack, but I wanted to have more control over the ingredients. This homemade big crunch granola is simple to prepare, has only 100 calories per serving, and pairs perfectly with my favorite yogurt to keep me satisfied through the mid-morning hunger pangs.


Give this recipe a try to enjoy a delicious healthy granola snack. It's simple to prepare, and your kitchen will smell amazing while it's cooking.


Here is what you need:


Ingredients:

4 1/2 cups old-fashioned rolled oats

1/2 cup raw sunflower seeds

1/2 cup pumpkin seeds

1/3 cup raw brown sesame seeds or flax seeds

1 cup sliced raw almonds

1 cup unsweetened large flaked coconut


The Syrup:

1/3 cup of butter or coconut oil

1/3 cup brown sugar

1/3 cup honey

1/4 teaspoon salt

1 1/2 teaspoons vanilla extract

3/4 teaspoon baking soda


Instructions:

1). Preheat oven to 325 degrees and spray a large pan with cooking spray or line with parchment paper.

2). Mix your dry ingredients. Add in your oats, sunflower and pumpkin seeds, coconut, almond, sesame (or flax) to a large bowl and then stir.

3). Time to make your syrup. Add butter to a large saucepan and melt over medium heat. Stir in your brown sugar, honey, and salt, then bring to a boil. Once boiling, remove from the heat, and stir in your baking soda and vanilla.

4). Now combine. Pour the syrup over the dry oat mixture and mix well until everything is evenly coated.

5). Bake. Pour the mixture onto the prepared pan and spread evenly. Bake for only 8 minutes. Remove from the oven, and with a spatula toss the granola, and then flatten it back down (with the back of the spatula). Bake for another 8-12 minutes until golden brown.

6. Cool down. Remove the pan of granola from the oven, and with the back of the spatula press firmly on the granola, to flatten. Allow the granola to cool completely before stirring and breaking into clusters.


Yields: about 8 cups

Serving size: 1/4 cup
